Ingredients:

2 cups bread flour
1 cup cottage cheese (blended with 1/4 cup milk until smooth for a softer texture)
2 tablespoons melted salted butter
1 tablespoon honey
1 cup shredded sharp cheddar cheese
1 cup diced ham
2 tablespoons fresh chives or green onions, finely chopped
1 tablespoon baking powder
1/4 teaspoon baking soda
½ teaspoon salt
½ teaspoon garlic powder (optional)
½ teaspoon black pepper
1 egg (for brushing tops, optional). You can also brush tops with milk.

Instructions:


Prepare the oven:
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Mix dry ingredients:
In a large bowl, combine flour, baking powder, baking soda, salt, garlic powder, and black pepper.
In a separate bowl add wet ingredients:
Blended cottage cheese, honey, melted butter. Then fold in cheddar cheese, diced ham, and chives (or green onions) until combined.
Combine wet and dry ingredients. Mix until it starts forming a cohesive dough
Shape the biscuits:
Turn dough onto a lightly floured surface and gently press it together.
To creat a layered texture: shape the dough into a rectangle shape. Fold in half and roll out. Countinue this process 4 times.
Flatten to about 1-inch thick and cut into biscuits. This recipe should creat 8 biscuits.
Bake:
Place biscuits on the prepared baking sheet. Brush tops with beaten egg or milk if desired for a golden finish.
Bake for 15–18 minutes, or until biscuits are golden brown and cooked through.
Serve:
Enjoy warm or store in an airtight container in the refrigerator for up to 5 days.

Reheat: I put 1 in the microwave covered with a damp paper towel for 30 seconds.
